![]() Beemster Extra Old Beemster exhibits the traditional characteristics of an aged Dutch Gouda (pronounced How-dah) and is one of the most widely known in its category. Aged for three years, Beemster’s dense interior is almost ‘pumpkin’ in colour. The aroma is sweet, milky and earthy. Flavours are intense, and complex. Butterscotch/toffee flavours predominate over smoky undertones followed by slightly bitter coffee-like notes towards the rind. The texture is incredibly flaky, hard, and initially dry, then creamy, almost like fudge. Scattered crystals of milk protein offer a surprising, yet pleasing crunch. Best eaten at room temperature.
