![]() Niagara Gold An Oka-style, semi-soft cheese, Niagara Gold is the Comfort family’s homage to the washed rind, French cheeses produced by Trappist Monks of the Loire valley. The Comforts’ hardy Guernsey cows are well adapted to tough Canadian winters, and produce extremely rich milk, (higher in Beta Carotene than other breeds) and that creates an excellent, golden coloured cheese. Offering flavours of hazelnuts and also subtler buttery notes, Niagara Gold is delicately mild and sweet when young and gains pungency and piquant qualities with age. The rind offers classic washed-rind qualities of grit, salt, and strong aroma, adding one more pleasurable level to the cheese experience.
