![]() Paillot de chèvre This is a soft, surface ripened cheese, shaped in a traditional log shape with long pieces of supportive straw running the length of the exterior, thin, bloomy, white rind. The interior paste is white and firm towards the centre but runnier at the rind. Mildly aromatic, the flavour, slightly tangy, lactic and goaty with subtle hints of hazelnut, becomes more pronounced with age.
